Fresh Cranberry-orange Relish

Ingredients:
 
1 Navel orange
1 (12 ounce) package fresh cranberries (or more)
1/2-cup sugar
1/8-teaspoon ground cinnamon
Fresh grated ginger (optional)
 
Divide orange into sections (I make them small).
Place orange sections and cranberries in a food processor; pulse until finely chopped.
Transfer relish to a bowl, add the sugar and cinnamon. Stir and refrigerate to allow flavors to blend, at least 2 hours.
 
You can double the recipe if you want more and add more cranberries if you like your relish more cranberry intensive, I do. Some people like more sugar but I like it tart.
 
With my leftover relish, I make a cranberry jello mold. It makes for a great dessert when served with whipped cream.
